Day2 of 14Day Vegetarian Challenge
I have been enjoying the challenge so far. I have not been missing meat - AT ALL
Today was a rough day. I had migraine pains from last night which carried over into today. So naturally I did not want to do anything.
For breakfast, Derrick made a yummy smoothie for breakfast from kale, banana and Orange. It was do yummy and really filling. I did not want lunch because I was still quite full.
I wanted to snack on something so I made plantain chips by thinly slicing a green plantain. Derrick and I enjoyed this snack so much that I made a second batch. Love it!
For dinner we had a mushroom, sweet onions and egg salad with tomatoes. Simple dinner but it was so good and filling.
